A great Spring break was in Crete in May a few years ago. Before the excessive heat of July and August, it's really pleasant and green. There are few enough tourists to be able to hire a car and just turn up and book into small hotels wherever you feel like stopping.
I recommend a circular tour round the island for a week or so but staying as far away from the capital Heraklion as possible. Best memories are of eating outside overlooking blue sea bays, grilled whole fish on the barbecue and it's funny how good Greek wine tastes in Greece. One part of the tour took in a twisting mountain road, with no fence or barriers and the road surface crumbling down the cliff side. Periodical bunches of flowers and little shrines mark out where somebody got it wrong.
My last night there was the only disaster, within striking distance of Heraklion airport. Too many pissed up Germans in a big touristy hotel making a racket all through the night. I wouldn't want to do a package tour and end up in that sort of shit hole for the entire week.

Drawbacks? Having to fold up used bogroll to put into litter bins instead of flushing it down into the inadequate sewer system.
