I've been given a load of frozen rhubarb from a mate's garden- anyone know how to cook th stuff? not had a decent crumble in years (no innuendo please!)

My next door neighbour always used to say that he put manure on his Rhubarb! Mucky Bastard...I always prefered Custard!

here is what I do with mine,,,,,,,,,,,,,,,put rhubarb in a pan no water, and a good scoop of sugar (sorry can't be more precise) simmer until soft, put to one side.
Put in Food Blender or whatever they are called, 8oz of Self Raising Flour, 5 oz of butter, 5oz of Ground Almonds, 5 oz of Sugar, blend. Or do it by hand, you just rub in the butter and flour et al until they resemble breadcrumbs.
Put Rhubarb in a dish, and pile on crumble bake in the over for about 20/25 mins sorry don't know what number I have Raeburn, just normally guess, but I suppose Gas 6.
Make good custard.......5 egg jokes, a good tablespoon of sugar, a teaspoon of vanilla essence or a pod, 1 teaspoon of cornflour, and 3/4 pint of double cream.
Beat eggs, sugar, cornflour and vanilla in a bowl. Warm cream until just off boil, add to eggs back on the heat and stir until think, put in jug. Always keep beating if it looks like it might curdle, don't worry as temp comes down it will even out.
Enjoy.

Also made the crumble with the rhubarb that has lived at the bottom of the garden for so long. Nice recipe, Thanks. The custard lacked a bit of colour but thats my cooking for you :D
