Takeaway was filthy - again
By Newsdesk (newsdesk@bradford.newsquest.co.uk)
Health officers found "filthy" conditions in a Bradford takeaway only weeks after the owner had been punished for similar matters, the city's magistrates heard.
Shava Khan was conditionally discharged in July, 2005, after pleading guilty to 27 breaches of food safety regulations.
Less than three months later, health officers paid another visit to the Spice Ranch takeaway in Thornton Road and found the premises posed a serious threat to public health, said prosecutor Ben Crosland.
Today, Khan, 28, was back at the same court where he pleaded guilty to nine breaches of the same regulations and breaching his conditional discharge.
The magistrates decided that, as their powers were limited to a maximum fine of £5,000 on each charge, the case should be sentenced at the Crown Court. Khan, of Bude Road, off Rooley Lane, Bradford, was bailed to appear there next month.
Mr Crosland handed the magistrates photographs showing conditions discovered at the premises during inspections in September, 2005, and January last year.
On the first visit, the kitchen walls, ceiling, sink unit and ovens were dirty. The inside of a microwave oven was spattered with food debris and had clearly not been cleaned for some time.
Racks in a fridge were dirty and the bottom was covered in food debris. A green chopping board was filthy and two open cans of mouldy potatoes were found in a fridge freezer.
Khan was not wearing protective clothing and there was no temperature probe with which to check food.
The premises were closed, with Khan's agreement, but reopened several days later after a further check revealed conditions had been improved.
When the officers returned in January they found things had deteriorated again.
Food debris was found at the bottom of a fridge used to store pizza toppings, the floor was dirty and the microwave was once more spattered with food.
A food blender was stored on the kitchen floor, an outside drain was blocked with debris, the toilet bowl was soiled and a filthy apron had been wrapped around a Tandoori-forming pan.
Old mouse droppings were seen on the counter shelves and behind a grill and deep fat fryer.
The premises were closed again by agreement, said Mr Crosland. They reopened a week later after thorough cleaning.
Paul Milner, for Khan, said his client had been out of his depth in trying to run the takeaway business.
The court heard that, last summer, Khan disposed of the business, which now operates under a different name. He was now working in a video shop and had no intention of returning to the takeaway trade.
Fish and chips without a doubt

its got to be curry.
having said that, cleanliness isnt that big an issue for me when i think of some of the filthy pigsties that i've lived and prepared food in.
when i was studying in paris i used to get my kebabs from a place with pigeons flying in and out of the kitchen!
Don't get me wrong, I like curry. You can't beat fish and chips though. It fills you up, taste's gorgeous and doesn't punish you on the way out next morning.

I've just leveled it up at 8 all! Curry for me. I'd eat it every night! I get my takeaways from Bharat now, same as where I eat out for curry. Made the mistake of getting a cheap one the other night from "Sims" in Lidget Green. Didn't even come close to the required standards!
We went to the AAgrar in Shipley earlier this year to the buffet bit. Fan-fucking-tastic! Give it a try!

So what?! New traditions have to start somewhere. If something has been developed due to a mix of cultures then great! Things change to suit the market! The most popular Indian dish in the UK is chicken tikka masala I think and you'd never find that in India apparently! I have a friend who toured India last year and she said the food was nothing like she expected! She did a blog with pictures and one pic showed her and her friend with a real banquet! I asked her about it when she came home and she said it was crap!
Anglo/Indian cuisine suits my taste just fine. I like that juxtaposition! tup:

The only time I 'go out' for a curry these days is when my brother-in-law comes over as he lives in the wilds of Cumbria and never gets to have one... otherwise I stay well clear and make my own(damned good they are).
The tales I've heard from plumbers, electricians and a mate who is a fire safety officer.... even some of the 'respectable' restaurants have very dirty conditions and practices.
Tuberculosis and salmonella are among some of bugs lingering around in our curry shops.... many of the kitchen staff may be illegal immigrants.
And I also know from an indian friend that some 'chefs' are not averse to gobbing in the product....
Nah... make my own or if desperate get a Tesco vindaloo.

If I do go for a curry I tend to stick to the more "upmarket" establishments, I know that's no guarantee of cleanliness, but having been a Shimla regular in my youth, I reckon nothing could be possibly be as bad as that used to be.
I also like the Nafeez in Undercliffe if I fancy a take-away.

Fish and chips for me every time. But only if it's done in dripping. No oil for me ! My local got taken over by some muslim chaps, and they replaced the dripping with oil, as it wasn't 'halal,' or whatever. The taste simply wasn't there, so we had to switch. All in all, it's a cracking meal- tasty, and fills you up every time.

Coo thats my local chippy - damn fine it is too.
That said it has to be curry for me. The Aagrah. I have now tried Shimlas in Shipley on a couple of occasions and have to say its not a patch. Fair do's its service is much less sultry (odd how a culture with a deserved reputation for good hospitality can barely ever get this right in a restaurant) being able to bring your own pop goes down well too tup: However I've had a very poor Jalfrezi in there and a quite passable Saag Gosht. Machli Masala twice, once very nice and once fairly ordinary.

Aagrah is vastly, vastly overrated IMO - the service downstairs is shit unless your one of the regular clique and the food whilst good is overpriced for the quality - your paying for its reputation rather than the actual product itself!!...
Rajhashi in Idle is miles better - better quality food, better value and better customer service - in fact there's probably 6 or 7 curry houses around Bradford much better than the Aagrah just off the top of my head!!

Theres one in Idle thats run by a former Chef of the Aagrah, forget which one might be the Khyber.
I used to eat in The Passage to India (as it was called) many moons ago. That was really nice. It was on Idle Rd sort of opposite Thorpe school - do you remember it?
I don't think the Aagrah is too pricey, my little take away cost £10 and I know that its quality is consistent. Yes theres cheaper out there but the quality is not as it should be. Horses for courses and all - I even know some people that like the Rajpoot in Shipley!!!!
I'd be interested in taking those 6 restaurants off you though. I've not been particularly impressed by the Aakbaars, Mumtaz, and Kashmirs that people tend to rave about. In fact Akbars (which is good other than all the Ghee floating on top of your food) even mamaged to set fire to my ice cream once.
Service in general at the bigger restaurants is very poor. I can't imagine any other sort of restaurant providing the same level of service and it being accepted.

Rajput has some nice dishes. I've been there a few times after going to the pub and it's cheap, good food that fills you up. The 'Asian Style' dishes are probably the best (really hot) but most of my mates go for the Bhunas which everyone seems to enjoy. The service however is mixed, some nights you'll get quality service but others it'll be terrible. Can't beat the prices though!

Go to the fish Mongers in John St market on a Thursday dinner time as they get a fresh delivery of Fish on that morning, and buy a nice fillet of Haddock (around £5), ask for it skinning and boning.
On your way home nip to Morrisons (or any other food retailers if you boycott sir Ken)and buy a container of Baking powder, plain flower, three large blocks of lard and a bag of Marie pipers Potatos ( superb for chipping)
When you get home fill your chip fryer ( or large pan) with lard and apply heat. Peel and chip the spuds. If you prefer crisp chips heat the fat to a high temp then add chips, if you prefer them soggy put them in the fat whilst still warming up. Fry until mid/dark brown. Remove and and place on a tray in a warm oven.
Mix around 150g of plain flour with 15g og Baking powder add water and mix well until you get a thick creamy consistancy ( DO NOT ADD EGG AS IT MAKES BATTER SOGGY, YAK), dip the haddok fillet in the batter and place immediatey into the red hot fat, fry for 5mins.
Put the fish and chips on a large plate.
Have three slices of fresh Warburtons bread with lashings of Yorkshire salted butter on.
Salt and vinegar to taste.
Enjoy !!!

Just one large fillet,
Butter isn't spreadable, leave in front of kitchen window for 20mins in butter dish, if not sunny, place in front of living room fire ( keep Cat away).
Batchelors Mushy peas comes ready in the can.
:-)
or alternatively buy a packet of dried pea's soak them in cold water overnight with tablespoon bicarbonate of soda (sometimes they come with a tablet of bicarb) The next day rinse, and the boil with salt. Just cover the peas with cold water, this normally takes approx 20 minutes, you can tell when they are ready, they do start to look a little bit mushy. Strain, stir in butter and pepper with a wooden spoon quite fast............. delicious. Or you can buy them frozen mushy, although I have never tried the tinned or frozen variety.

How can a fish market nowhere near the sea (so its contents have had to travel for miles) be one of the best?....
Its full of the dregs of this district in that area now!!
I'm off to see a job in Whitby today - and whilst there shall be purchasing some fish from the market there - literally a couple of hours since being caught - now thats a good fish market!!....;)
Well you obviously never saw or experienced Bradford Fish Market. Came in from Whitby and Grimsby overnight, and sold the next day. Of course you are better off being nearer the sea for freshly caught fish.
It has two rows of stall running down each side, selling fish, and crabs et al. They even sold wild game!!!

I remember the old fish market attached to the old Rawson market BG, stalls upon stalls of fishmongers .
Alas it's now down to two stalls in John St.
The fish delivered on the Thursday morning is caught just several hours earlier.
Unless you order, its a case of seeing what has been delivered, a couple of months back during the heavy rains and winds there was very little in the way of fresh fish making its way to Bradford, because the North sea obviously wasn't fit to take the trawlers out.
However, when the conditions are fine, try the fresh wild Sea Bass ( not the farmed stuff sold during the week).
The Lemon Sole is good.
BUT !! If you get chance to buy any freshly deliverd Halibut, then do so, its very expensive ( around £17 for three fillets) ,however it is sublime, bake it for 10mins brushed with a little oil, and leave the fatty skin on. It comes out looking likke a piece of Pork But tastes exquisite !
PS You don't always get the best fish at a fishing town, you need to know what to buy, or the local dealers know you're a visitor and palm of some stuff a couple of days old onto you.

Quite right - if your not educated enough, and are stupid enough to buy poor quality food of any sort then you deserve to IMO!!
The biggest tip when buying fish - amongst other things is to avoid ANY fish which smells of fish - it should smell like the sea, a fishy smell is the sign of decomposition - nice eh!! Also, if possible, and your not going to use it immediately (or freeze it) ensure its gutted, the fish looses its freshness much quicker with the guts intact! Clear eyes is another sign of freshness, as is the firmness of the flesh - always look out for fish which still has signs of rigor mortis - never possible anywhere apart from seaside locations from my experience!!

One lunch time a while back I once bought a load of cooked crab legs and claws. They were nice enough to pick the meat out of. However, I disposed of them in the waste bin in the office, the smell the next morning was ideous, folk were wretching walking down the office. haha needless to say I didn't admit to been the culprit.

KB is quite right about watching and being observant about what you eat.....for fish you cannot be too careful....clear eyes, bounce in the flesh when you touch it, smell's like the sea, and it just looks glistening, hard to explain but you know when you are looking at a fresh piece of fish.....

JY's right in that Halibut is excellent - they're getting quite rare now, they're only found in the very deep cold oceans, a bit like Monkfish which is also good - both are ugly looking things tho until they're filleted - Halibut are massive too, like Tuna they can grow up to 5 or 6 feet long!!
The king of saltwater fish is seabass - not only do they look great but the taste is nice and subtle - still not on a par with smoked wild salmon tho in the fish stakes!!
The tip with fish is never ever overcook it - its quite an art cooking it correctly, it obviously needs to be cooked through - nowt worse than it not being cooked, but overcooking kills it - the best way IMO to cook a nice fillet of fish is either to put it in a tinfoil envelope with a grind of salt and pepper and a nob of butter for however long in the oven - or even better to pan fry in a little olive oil and a nob of butter - salt and pepper onto each side, and a gentle pat of flour onto the skin side - heat a couple of lugs of olive oil to medium and cook the flesh side first, then turn over onto the floured skin side, turn up the heat (the skin protects the fish) and add the butter - once the butter starts to go nutbrown the fish is usually done - if not, turn off the heat and let the residual heat in the pan cook through the fish as you dish up your veg!!....

You wouldn't think that a Monkfish tail tasted so good when you look at what it comes off would you.....
Ugly fookers - they have a tentacle thing aswell which lights up and acts like a lure - so that other fish are attracted to it before it snaffles em up - quite ironic that its also the way that we catch them too....lol

up on skye i put out lobster pots over summer and generally in my first season i caught brown edible crabs and that was it but i caught a lot and i've ssen what they cost in the local seafood restaurant. i really like shellfish like crabs and lobster but would not pay for it and if i catch them it makes eating them all the more special. i start putting them out soon after i've repaired them and have a load of new areas to try this year well out of the reach of commercials with bigger boats.
i love sea fish - mackerel are plentiful and we catch loads, great fish to barbecue etc. over winter we've been bagging some good pollock which are a memeber of the cod family and ok not quite as nice but are nice in their own right. great done in pasley sauce or battered fish n chips style straight after you've caught em and brought them home. have caught smallish ling too, ling is really nice. we have bass up here but they are like rocking horse shit or maybe i'm just a crap sea angler more likely!
the most posh fish i catch and rarely eat (usually return them) is sea trout fresh run in from sea. way nicer than salmon which to be fair is pretty nice. below are some picks to show that i am basically a king of sea food gastronomy ha ha! i was eating some brown trout the other night that i bagged off a hill loch that i fished for the evening. great supper freid in butter with seasoning.
salmon i caught last year fly fishing... very tasty
