I'm cooking for somebody tonight.
The dish I fancy requires a glass of white wine to be added but the person I am cooking for cannot drink alcohol.
What is the best alternative? Can I just use a bit of vegetable stock?
The main ingredients are squid, tomatoes and capers.

Can you not get shloer in switzerland? isn't that a form of none alcoholic wine?

I wouldn't risk cooking with Schloer, Basel.
Try White wine vinegar which isn't alcoholic, I don't think, or chicken stock.

Use chicken stock instead of white whine - Knorr is better and available abroad -
If not try a little garlic mashed with Black pepper and paprika - add to 1/4 ltr of water - Do not add salt as it will make the Squid almost unpalatable.
Dont worry about the Garlic being overpowering the Tom's will take off any strength.
If not get the Bratwurst out ......

Just replace the wine with water or Vegetable stock (use a cube)

Sounds like stock is the way to go, though I might use olives instead of capers to make sure it doesn't get too salty.

As I understand it, alcohol evaporates away when cooked in a sauce above 78º.

Ditto to what Z says - wine added to meals/sauces is for the taste only - the alcohol burns away on cooking!!

Definitely not, Switzerland is far too posh for that crap :-) Though you do get Rivella (http://www.rivella.com/) which is wierd stuff, like pop but made from the by products of cheese making.

I like Rivella. It's an odd taste but it grows on you. Bloody awful when it's warm though.
Mmmm, cheesy pop.
Rivella Blue is one of the only pops I regularly drink besides Coke Light. It's a pain that these seem to be the only sugar free drinks easily available (other than Supermarket own brands and Sinalco in large bottles). I love the choice you get in the UK, especially now all the "Z" varieties have come out.

I like squid. So does she (well she does on pizza anyway).
She doesn't eat meat and shellfish brings me out in a rash (sorry pk) and I fancied something with pasta so squid with capers and cherry tomatoes in white wine seemed the way to go.
